Scannable QR codes seemed like a solution, but, as manager Carmina Katigbak put it, \u201cYou see QR codes all over the place. From <a href=\"https:\/\/www.flickr.com\/photos\/billhails\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bill Hails<\/a>.<\/p><\/div>\n<p>Sustainability has always been a priority for the San Diego restaurant, which has two branches in the Pacific coast city. Their website devotes an entire page to \u201cSustainable Sushi,\u201d which tells where they source each species and what its fishery sustainability status is.<\/p>\n<p>Harney Sushi\u2019s commitment to good stewardship of the seas is hardly the industry norm. A <a href=\"https:\/\/oceana.org\/wp-content\/uploads\/sites\/18\/National_Seafood_Fraud_Testing_Results_FINAL.pdf\" target=\"_blank\" rel=\"noopener noreferrer\">two-year study<\/a> released in last February by the international conservation group Oceana found that 44 percent of fish sold in 674 venues around the U.S. were mislabeled\u2014findings that were based on DNA testing of purchased samples. And sushi restaurants had a higher rate of mislabeling\u201474 percent\u2014than either grocery stores or other restaurants.)<\/p>\n<p>At Harney Sushi, the team wanted to let customers know where they\u2014and the fish they serve\u2014 are coming from.\u00a0 Co-owner Dustin Summerville had an idea, Katigbak recalled in an interview: Why not put the QR-coded labels right on the fish? \u201cPutting it on the sushi just as you\u2019re about to eat it gets people\u2019s attention,\u201d she said.<\/p>\n<div id=\"attachment_2715\" style=\"width: 510px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.myassettag.com/blog\/wp-content\/uploads\/2013\/08\/fishing-nets.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2715\" class=\"size-full wp-image-2715\" alt=\"discarded nets on the beach\" src=\"https:\/\/www.myassettag.com/blog\/wp-content\/uploads\/2013\/08\/fishing-nets.jpg\" width=\"500\" height=\"375\" srcset=\"https:\/\/www.myassettag.com/blog\/wp-content\/uploads\/2013\/08\/fishing-nets.jpg 500w, https:\/\/www.myassettag.com/blog\/wp-content\/uploads\/2013\/08\/fishing-nets-300x225.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><p id=\"caption-attachment-2715\" class=\"wp-caption-text\">With more unethical dealers falsifying the fish they sell, QR codes can help reassure diners that what they&#8217;re getting is what they asked for. From <a href=\"https:\/\/www.flickr.com\/photos\/decadence\/\" target=\"_blank\" rel=\"noopener noreferrer\">echiner1<\/a>.<\/p><\/div>\n<p>The restaurant team came up with \u201cedible\u201d thumbnail sized QR-code labels made of soy paper and printed with water-based ink. A tech consultant creates the codes, and the restaurant staff prints the labels in-house on large sheets of the soy paper and cuts them as needed. The label is placed right on top of a piece of sushi before it goes to the customer.<\/p>\n<p>&#8220;At first the QR codes led to the NOAA website,\u201d said Katigbak, referring to the National Oceanic and Atmospheric Administration\u2019s online <a href=\"https:\/\/www.fisheries.noaa.gov\/topic\/sustainable-seafood\" target=\"_blank\" rel=\"noopener noreferrer\">seafood guide<\/a>. In July, the restaurant started serving up its first species-specific QR code, for its popular albacore tuna. The albacore QR label tells where Harney Sushi sources its fish and links to videos of the fishermen who catch it. The tag also tells how the species is doing in the grand scheme of sustainability. (It gets a \u201cbest choice\u201d rating from the Monterey Bay Aquarium\u2019s Seafood Watch.)<\/p>\n<p>Eventually, the Harney Sushi team hopes to create QR labels for all the species of fish that they serve.<\/p>\n<p>Not that they\u2019re thinking of labeling every piece of sushi. \u201cIt\u2019s pretty labor-intensive to keep all of those little bits of paper separate,\u201d said Katigbak. \u201cWe\u2019d like for each table to get at least one QR code,\u201d she explained.<\/p>\n<p>It\u2019s the message of sustainability that they want to get across to their customers. \u201cIf we don\u2019t like where it comes from, we don\u2019t sell it,\u201d says Katigbak. \u201cSustainability is pretty important.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"<p>With mislabeled seafood a nationwide concern, the folks at Harney Sushi wanted to get the message out: not only is their fish exactly what the menu says it is, but it comes from sustainable sources.
